Can anyone help me understand how this works? It says add a dice but then remove the same amount of dice before results are generated.

I was looking for this exact question lol. My friend did not remove (1) dice when he did it. It got me to thinking how "OP" Nasier was because of all the defensive capabilities (parry ranged/magic, Reaction, Act with Certainty), and the offensive side as well (Duelist, Off Mastery, etc). We're all still learning though 
Also about the Duelist for the Ashmen, does it not "trigger" when an Ashmen is being assisted by another model?

Chinkster is correct, the rules on duelist itself say that you do not gain the benefits if you are assisted in the attack. Now, the Hakar does not need Duelist to get Offensive Mastery, so you can assist him all you want without issue. This helps with Motivations that require your leader or only 1 attack to do the killing.
